Murungai Keerai Poriyal | Drumstick Leaves Stir-fry (Vegan) By Jai Padhu
Mustard Seeds – 1/2 Tspn
Urad Dal – 1/2 Tspn
Dry Chillies – 3 to 4 Nos
Onion – 100 Gms
Coconut – 1 Half (grated)
Moringa Leave(Murungai Keerai) – 500 Gms
Steps to Make :
1.Take a pan add 3 tspn of oil and heat it up,then add mustard
seeds and urad dal to it and fry it well.
2.Now add dry chillies, curry leaves, chopped onions and fry
well in the oil.
3.Once the onion fried well now add the greens to it and mix it
4.Add small amount of water and cook the greens in medium
flame by closing the lid.
5.Open the lid mix the greens well add salt for taste
6. Now add the grated coconut to it and mix well with greens
cook for 5 more mins
Drumstick leaves or Moringa as its called in the western world has been used for centuries as folk medicine in India. In Ayurvedic traditional medicine, the leaves are believed to affect blood pressure and glucose levels. Drumstick leaves are given to nursing mothers in the belief that they increase lactation. The leaves are the most nutritious part of the plant, being a significant source of B vitamins, vitamin C, provident in A as beta-carotene, vitamin K, manganese, and protein, among other essential nutrients. We consume a lot of drumstick and its leaves in South India. Today I made a poriyal / stir-fry with the drumstick leaves.
Murungai keerai / drumstick leaves poriyal makes its appearance very rarely in my kitchen. That’s coz I rarely buy drumstick leaves. I become lazy when it comes to separate the leaves from the stalk. But recently I am buying very often to consume it for its health benefits. My mom makes very often. Most of the time she makes kootu.
